About Olivier Carl
In the year 2000, Olivier Carl is faced with an important choice in his life: study or take over his family's vineyard. Because of his passion for winemaking, he chooses to embark on the adventure and take over the 6 hectares of vineyards from his father André and mother Marguerite. He moves to Dambach-la-ville, a village located between Strasbourg and Colmar in the Alsace region, to fully dedicate himself to the profession of winemaking. We are all too happy about that!
For several years Olivier practiced viticulture according to conventional principles, but around 2012 Olivier and his wife Anne switched completely to organic farming. In 2015, this even leads to an official AB logo certification from ECOCERT. They don't just leave it at growing grapes organically, vinification without additives according to "natural" methods also becomes the standard not very much later.
For Olivier, the way the soil is worked is hugely important. Retaining water cases in winter and spring is difficult on the granite and sandy soils, so on some plots, for example, he lets grass grow between the vines. Everything he puts in place to prevent drying out. Simultaneously, he does not want to force anything in the vineyards: he tolerates the loss of a small part of his future harvest due to vine diseases, such as mildew. He refuses to apply immediately permitted copper or sulfur treatments.
It hardly gets much more natural than this wine! Filtering is hardly used by Olivier, if at all, and the addition of sulfite is also out of the question. Expect powerful aromas and crisp fruit in Carl's wines, due to the combination of the unique terroir and natural vinification. We have been huge fans since we were introduced to these wines at D'Summer Fascht in Strasbourg in July 2022!
