• 100% gamay from Beaujolais, from three different vineyards.
• Largest portion comes from Moulin au Vent from 65-year-old vines planted on pink granite.
• 30% of the grapes come from a vineyard from Brouilly with clay and limestone soil. This vineyard belongs to Julien Bertrand.
• The remaining small portion of grapes comes from a vineyard owned by Patrick and Justine.

During vinification, they opted for whole cluser fermantion and aging in amphora of clay and oak barrels. No clarification, filtering or added sulfite.
